Grain amaranth is considered a pseudocereal due to its characteristics similar to those of true cereal grains. However, botanically it cannot be included within this plant group. The amaranth plant can be used practically in its entirety. The stems are consumed as a vegetable and its leaves can be added to different stews or used to make soups, creams or tortillas.
