Clary Sage or Roman Sage It is a herbaceous plant belonging to the Lamiaceae family, native to the Mediterranean region to central Asia.

It is short-lived, reaching 1 m in height when in flower. In winter it dies, leaving a basal rosette. The leaves have a woolly texture and reach 10-20 cm long and 6-12 cm wide.

Its flowers appear in groups of 2-6 on the stem and are white, pink or pale purple. The essential oil is obtained by steam distillation of the leaves and flowers.
